Scorzonera

Scorzonera is an edible perennial root crop which was popular in Victorian gardens. The dark root is considered to be superior tasting to parsnips.

Sow seed straight out into the garden in early spring, roots will be ready to harvest in fall or will over winter for a spring crop. The roots will sweeten over the winter like parsnip. Seeds can take up to 21 days to germinate. The seeds will not sprout in intense heat or drought.

Plants can grow in heavier soils and can deter carrot moths. Seeds mature in the second summer.
