Salsify, Tragopogon porrifolius, is a hardy root crop and wild vegetable. Grow like carrots and matures in the fall from a spring sowing. Leaves and flowers are edible and can be used in salads. Seeds will develop in the second summer. Roots will sweeten after fall frost and can be dug in spring. The roots are also a pre-biotic and can be mixed with dried dandelion root for detox.
